, the region's most representative dish. After the guided tour, you'll have the opportunity to visit Chichén Itzá (optional), one of the new wonders of the world. This archaeological site is undoubtedly the most famous in the Mayan world. The Maya possessed significant knowledge of astrology; they built the most famous pyramid at Chichén Itzá in alignment with the Sun, so during the spring equinox, you can observe, thanks to a play of shadows, the sun. Day 3: Merida

Breakfast at the hotel. We'll begin the day with a guided tour of Mérida, whose historic center is the second largest in Mexico after Mexico City. Due to its unique geographic location, strong Spanish influence, and isolation from the rest of Mexico, Mérida has developed a distinctive cultural and political identity. Its unique culture and traditions are clearly reflected in its clothing, language, cuisine, and the way it celebrates local festivals. Mérida's cuisine is also distinct from traditional Mexican cuisine because it has been influenced by the local indigenous culture, as well as Caribbean, Mexican, European, and Middle Eastern flavors. After this visit, explore a hacienda (optional), an old Mexican residence that showcases the city's growth in the 19th century. Enjoy a typical lunch at the hacienda. Visiting the hacienda will give you a true sense of what a fully functioning henequen hacienda once was, with the luxurious style and authentic traditions of the era. You'll literally travel back in time, transported in wooden carts called " truks " pulled by mules, just as in its early days. You'll have the opportunity to learn about the transformation process of henequen (the green golden thread of Yucatán); from the plant to the fiber, and from the fiber to the thread and finished product. This hacienda also has a cenote where you can swim. (Bring a swimsuit and towel.) Dinner at a restaurant and overnight stay at the hotel.
